I am not the biggest fan of aubergines (eggplants)- but with this recipe, you can’t go wrong!

Roasted Aubergines and Red Peppers!

You will need:

1 large aubergine

2 Red Peppers

Olive Oil


Cut the aubergine into small pieces, and put it into a bowl with cold water. Make sure that the aubergine is covered with water. Put 3 or 4 tablespoons of salt in the water/aubergine mixture, and slightly stir for 15 seconds. Then let sit for 15 minutes.

While this sits, pre-heat your oven to 400 degrees, and chop the red pepper into small pieces. Drain water from the aubergine (can rinse off salt if you please). The water should be dirty looking- this trick gets all the bitter taste out of the aubergine.

Then grease a pan, put the aubergine in the pan, add red peppers. Salt to taste. Apply a generous amount of olive oil over top of the vegetables.

Put in the oven on 400 degrees  for 30 minutes. You want it to be changed in texture, with some pieces brown in color.

I usually stir the pan half way through the 30 minutes or so. Wha la! Serve with Pasta or some other vibrant colored food.
