This morning started out with some homemade banana pancakes (recipe adapted from passionatehomemaking.com) – it is super simple too!
You will need:
- 1 1/2 – 1 3/4 cups buttermilk or kefir (or non-dairy alternative) [I use yogurt!]
- 2 Tbls olive oil
- 3 mashed bananas (try any fruit: blueberries, strawberries, raspberries)
- 1 tsp vanilla extract
- 1 1/2 cups uncooked rolled oats (or any other grain alternative) [I use half spelt flour, half oats]
- 1 tsp of ground spice (cinnamon will do!)
- 2 tsp baking powder
- 1/2 tsp. baking soda
- 1 tsp salt, to taste
- 1 egg
Mix all ingredients together and spoon into a hot, lightly greased pan or put in a waffle iron for yummy pancakes/waffles! Top with butter and maple syrup (try peanut butter too!).
Then we went strawberry picking! A friend, Andrea, invited us to join her and her cute kids (Grayson & Leland) to spend the day together and we gladly accepted. I recommend purchasing local food (even over purchasing organic food); it is so good to eat nutrious food right out of someone’s yard than from a store that has carried the produce from miles and miles away. This field does not use any pesticides- it is all organic- and just a £1 for the weight of a pound of strawberries. PLUS- you can’t eat as many as you want while you are picking! [we also picked up a jar of local produced honey, I can’t wait to try it!]
We ended out the day by making pumpkin pies, which is a pretty big deal because you can’t purchase canned pumpkin in Scotland. We were blessed to have an imported can.
